Yumeiro Patissiere Cookbook Volume 1~3 Pictures

Chocolate Chip Cookie

100g butter (softened)
50g sugar
1 egg
130g all purpose flour
1/2 tsp baking powder
50g chocolate chips.

1. Mix the butter and sugar together.
2. Add in the egg and mix.
3. Sieve in the all purpose flour and the baking powder.
4. Add in the chocolate chips and fold.
5. Bake at 100 degree celsius for about 10 minutes or until cookie is baked.

It is that simple :) Just 5 steps and it is so delicious

Chocolate Peanut Butter Fudge

375g choco-chip
125g unsalted butter
150g smooth or chunky peanut butter (Smooth preferred)
12 digestive biscuits (crushed)

1. Pour the choco-chips into a saucepan and add the butter and peanut butter.
2. Slowly melt the chocolate until it is all melted and smooth
3. Add in the crushed biscuits and mix it well.
4. Transfer the chocolate into a pan or mould and leave it in the fridge to harden.

Moist Brownie

Ingredients :

250g choco-chip
250g unsalted butter
1 cup brown sugar
1 teaspoon vanilla essence
3 eggs
3/4 cup all purpose flour
1/4 cup self raising flour


1. Put the 250g of unsalted butter into a saucepan
2. When the butter starts to melt, add in the choco-chips, melt it over low to medium heat.
3. When the chocolate and the butter is halfway melted, add in the brown sugar.
4. Once it is fully melted, take off the stove and add the vanilla essence.
5. Transfer the mixture into a mixing bowl
6. Add in the all purpose flour and self raising flour into the mixture.
7. Add in the three eggs. Make sure the mixture isn't too hot.
8. Bake the cake at 170 degrees celsius for 40 minutes or until a skewer when inserted in the middle comes out clean

Egg Tart

For the pastry :
100g butter
200g plain flour
1 egg yolk
50g sugar
1-2 tbsp of water

For the filling :
100ml water
80g sugar
3 eggs
100ml milk

1. Mix the butter, flour and sugar together.
2. Add the egg yolk in.
3. Knead it into a dough and press it into the moulds.
4. Put the water and sugar into a mixing bowl.
5. Add milk and eggs and beat the mixture well.
6. Bake in the oven at 160 degrees celsius for about 20 minutes or until the filling is cooked.

Sponge Cake

Ingredients:

8 eggs (seperated)
190g sugar
95g flour
55g cornstarch flour
45g butter (melted)
1 tsp vanilla essence

1. Preheat the oven to 180 degrees celsius
2. Place the egg whites into the mixer and add the sugar a little at a time (leave 2 tbsp of sugar). Once nice and stiff, turn off your mixer.
3. In another mixer, add your egg yolk and mix on high until creamy using the same mixer. It will take about 1 minute. Add 2tbsp of sugar into the egg yolks and continue mixing until thick. Add vanilla essence and mix it till it looks double its volume.
4. Slowly add the egg white into the egg yolk by using batches. Add one batch into the egg yolk and then fold, add another batch and fold in, and then another batch and fold in. Do not mix. You would want to fold and do not over mix.
5. Sieve in the flour and cornstarch into the batter and then fold in again.
6. Pour the batter into the pan and bake for about 30 minutes or until it's brown and when you insert a skewer in the middle it comes out clean.

Rich Chocolate Cake

Ingredients:

200g 70% dark chocolate
1 1/2 cup butter
8 eggs
2 1/4 cups caster sugar
1 1/4 cups plain flour
1/4 cups cocoa powder
1 1/2 tsp baking powder

For the decoration:

1 cup cream
200g choco chips
600ml heavy cream
1 tsp vanilla essence
3 tbsp icing sugar
20g PHILADELPHIA cream cheese

1. Place the chocolate and butter into a bowl
2. Melt in the microwave by putting it in for 10 seconds, taking it out to stir, putting in for 10 seconds, taking out to stir all the way until fully melted.
3. Whisk the egg  and sugar together
4. Combine egg and chocolate mixtures
5. Sift flour, cocoa powder and baking powder together and mix into cake mixture until well blended.
6. Pour into two 20cm round cake tins
7. Bake in slow oven.
8. Insert a knife into the centre to check if it is done, if it is ready it will come out clean.
Tip: If the cake looks done before it is fully cooked, place an empty baking tray on the shelf above it in the oven and leave it to bake.
For the decoration:
We will be making two different creams.
A ganache and cream cheese cream.
For the ganache:
1. Take 1 cup of cream and put it on the stove. Bring it to a boil.
2. Put some chocolate into a bowl.
3. Put the boiled cream into the chocolate and leave it for a minute or so to soften the chocolate then mix it.
4. Put the ganache into the fridge to harden or you can use it as a glaze.
For the cream cheese cream:
1. Put 600ml of heavy cream and put it into a mixing bowl. Add in 1 tsp of vanilla essence and 3 tbsp of and cream cheese
2. Use an electric mixer to mix or you can do it the traditional way by hand too.
You can decorate it however you like.
